Steps
1. Preheat a grill or grill pan over medium heat.
2. Season the chicken breast with olive oil, lemon juice, Italian herbs, salt, and pepper.
3. Grill the chicken for about 6-7 minutes on each side, or until cooked through and juices run clear. Let it rest for a few minutes before slicing.
4. In a large bowl, combine the mixed greens, cherry tomatoes, and cucumber.
5. Slice the grilled chicken and add it to the salad.
6. Drizzle with additional lemon juice and olive oil if desired. Toss gently and serve with lemon wedges for garnish.
