Steps
1. To make the crust, combine flour and salt in a bowl. Cut in butter until mixture resembles coarse crumbs. Stir in ice water, a tablespoon at a time, until dough forms. Wrap in plastic wrap and chill for 30 minutes.
2. Preheat oven to 375°F (190°C).
3. In a skillet, heat olive oil over medium heat. Add onions and cook, stirring frequently, until caramelized (about 15-20 minutes). Season with salt and pepper.
4. Roll out the chilled dough on a floured surface to fit a small tart pan. Place the dough in the pan and trim the edges.
5. Spread the caramelized onions evenly over the crust. Top with crumbled goat cheese and sprinkle with fresh herbs.
6. Bake for 20-25 minutes until the cheese is slightly melted and the crust is golden.
7. Serve warm, garnished with whole goat cheese, fresh thyme, and a small bowl of olive oil for dipping.
