Steps
1. Preheat oven to 375°F.
2. Wash and dry the potato, then prick it with a fork.
3. Place the potato on a baking sheet and bake for 45 minutes.
4. Remove the potato from the oven, then cut it in half lengthwise.
5. Scoop out the potato flesh from the skin and place in a bowl.
6. Add the butter, cheese, salt, and pepper to the bowl and mash with a fork until creamy.
7. Place the mashed potato mixture back into the potato skins.
8. Top with additional grated cheese and bake for an additional 15 minutes.
9. Serve and enjoy!
