  1. Heat a large sauté pan over medium-high heat.
  2. Sauté the onion and garlic in a little olive oil, stirring, until onion starts to become softened.
  3. Add in the chicken. Cook until chicken is browned on both sides.
  4. Pour in the vegetable broth and the spices.
  5. Simmer until the sauce has thickened and chicken is cooked through.
  6. Serve hot over cooked squash or rice.
