1. Heat the cooking oil in a skillet over medium-high heat.
2. Add the garlic and onion, and cook until fragrant and softened, about 2 minutes.
3. Add the chicken and cook until lightly browned, about 5 minutes.
4. Add the cooked rice and soy sauce and continue to stir-fry until everything is combined and heated through, about 5 minutes.
5. Season to taste with salt and pepper.
