Greek Lemon Roasted Potatoes

Steps

1. Preheat the oven to 400°F (200°C). 2. Wash and peel the potato, then cut it into wedges. 3. In a large mixing bowl, squeeze the juice of the lemon and add the olive oil, minced garlic, dried oregano, salt, and pepper. Mix well. 4. Add the potato wedges to the bowl and toss until they are well coated with the mixture. 5. Transfer the potatoes to a baking dish and spread them out in a single layer. 6. Roast the potatoes in the preheated oven for about 30-35 minutes, or until golden brown and crispy. 7. Remove from the oven and garnish with fresh parsley before serving.
