
Steps
- Preheat oven to 350°F.
- In a small bowl, mix together the graham cracker crumbs and melted butter.
- Press the mixture into a greased 8-inch springform pan. Bake for 8 minutes and let cool.
- In a large bowl, mix together cream cheese, sugar, vanilla, lemon juice, and fresh lemon zest until creamy.
- Slowly add in cream until the mixture is light and fluffy.
- Spread the filling over the cooled crust, spreading to the edges.
- Bake in preheated oven for 20-25 minutes, or until lightly golden.
- Let cool, then chill in the refrigerator for at least 4 hours.
