Steps
1. Heat olive oil in a skillet over medium heat.
2. Add onion, garlic, and bell pepper. Sauté until the vegetables are softened.
3. Stir in crushed tomatoes, cumin, paprika, chili powder, salt, and pepper. Simmer for 5 minutes.
4. Create small wells in the sauce and crack the eggs into them.
5. Cover the skillet and cook for 5-6 minutes, or until the eggs are cooked to your desired doneness.
6. Garnish with fresh parsley and serve hot.
