Steps
1. Rinse the quinoa under cold water. Cook quinoa according to package instructions.
2. In a large mixing bowl, combine the cooked quinoa, cherry tomatoes, cucumber, red onion, olives, feta cheese, and parsley.
3. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper. Pour the dressing over the salad and toss to combine.
4. Taste and adjust seasoning if needed. Serve chilled.
