Steps

1. Preheat oven to 375°F (190°C). 2. Season the chicken breast with salt and pepper. 3. Heat olive oil in an oven-safe skillet over medium heat. Sear the chicken breast for 2-3 minutes on each side until golden brown. 4. Transfer the skillet to the oven and roast the chicken for 12-15 minutes until cooked through. 5. Remove chicken from skillet and set aside to rest. 6. In the same skillet, melt butter over medium heat. Add shallot and sauté until translucent. 7. Add grapes, thyme, and balsamic vinegar; sauté for 3-4 minutes until grapes soften and start to caramelize. 8. Pour in chicken broth and simmer until sauce thickens slightly. 9. Remove thyme sprig and season sauce with salt and pepper. 10. Plate the chicken breast and spoon the grape sauce over it. Serve immediately.
