Steps
1. Preheat oven to 375°F (190°C).
2. In a small bowl, mix the jam, minced garlic, soy sauce, salt, and pepper.
3. Heat olive oil in an oven-safe skillet over medium heat.
4. Season chicken breast with a little salt and pepper, then sear in the skillet for 2-3 minutes on each side until golden.
5. Brush the jam mixture generously over the chicken.
6. Add a sprig of thyme or rosemary to the skillet.
7. Transfer the skillet to the preheated oven and bake for 15-18 minutes, until chicken is cooked through.
8. Remove from oven, let rest for 5 minutes before serving.
