Steps
1. Heat the olive oil in a large skillet over medium heat.
2. Add the chicken and cook until lightly browned, about 5 minutes.
3. Add the garlic, ginger, curry powder, and vegetables, and cook for another 3 minutes.
4. Pour in the coconut milk and bring to a simmer.
5. Reduce heat to low and simmer for 10 minutes.
6. Add the fish sauce and season with salt and pepper.
7. Simmer for another 5 minutes, or until the sauce has thickened.
