
Steps
- Heat olive oil in a saucepan over medium-high heat.
- Add diced onion and pepper. Saute until slightly softened.
- Add potatoes and cook until softened.
- Stir in rice and tomato and cook until rice is tender.
- Season with salt & pepper and serve.
