Steps
Chop the cauliflower into chunks and pulse in a food processor until it looks like granules of rice and set aside. Heat the olive oil in a large pan over medium-high heat. Add the chopped onions and garlic and stir, reduce the heat to low and cook until the onions are softened and translucent, about 5 minutes.
Add the cauliflower rice to the pan and season with salt and pepper and cook, stirring occasionally, until the cauliflower is softened, about 10 minutes. Garnish with parsley and serve.
