1. In a saucepan, bring water or vegetable broth to a boil. 2. Add the rolled oats and salt, stirring well. Reduce heat to low and simmer for about 5 minutes until oats are cooked and creamy. 3. Meanwhile, heat olive oil in a skillet over medium heat. Add chopped spinach and sauté until wilted, about 2-3 minutes. 4. Once the oats are cooked, stir in black pepper and nutritional yeast (if using) for added flavor. 5. Serve the oats in a bowl, topped with sautéed spinach and sliced avocado. Sprinkle red pepper flakes on top if desired.
